
1. Strawberry Cake 🍓
Ingredients:
– 1.5 lb strawberries
– 40 g powdered gelatine (unflavored)
Optional:
– 3 tbsp honey (but honestly you don’t need it
How to make the cake:
Boil strawberries with a 1/4 cup water until a little soft but not mushy, approximately 10 min or less.
Drain excess liquid using a strainer.
Smash or blend until completely smooth. I used my food processor.
Transfer to a large bowl.
While still warm (but not hot, gelatin doesn’t work well on hot ingredients), mix through gelatine until dissolved.
Add the honey (optional).
Whip with a mixer until thick, light pink and fluffy, approximately 10-15 minutes. You have to mix it long enough for the composition to get fluffy! I used a hand mixer.
Pour into a lined tray and refrigerate until set, approximately 2 hours or overnight.
2. High Protein Chocolate Pudding 🍫
Hehe, TRUST!
Ingredients:
– 8 boiled eggs, MUST be cold!
– 6-8 tbsp unsweetened cocoa powder
– 1/2 cup milk of your choice (I used almond milk) mixed with 1/2 cup heavy whipping cream
– 1/3 cup (or more) honey
– 2 tsp. vanilla extract
Blend all the ingredients in a blender. Use a good blender to get a creamy consistency. Mine turned smooth and so silky here.
Refrigerate 10-15 min.
Make the ‘magic’ by layering the pudding over the cake.
