I eat these gummies every day. Skin glow, better gut, stronger joints, and about 20 calories each.

Store-bought gummy vitamins are mostly corn syrup with a little fruit flavor. These are blended blueberries, a spoonful of allulose, and unflavored gelatin.

The gelatin is the reason to eat them, and it is also what makes them set.

  • Gelatin is cooked collagen, and it supplies the glycine and proline your body uses to maintain joint cartilage, skin, and the lining of your gut.
  • Blueberries carry the anthocyanins that give these their deep purple color, along with the fiber and polyphenols that come with eating whole fruit instead of juice.
  • Allulose sweetens without the blood sugar rise you get from sugar, so a daily gummy stays compatible with active fat loss.

If you want to add a tablespoon of CWLI Collagen, it will fold right in. It is a bonus, not a substitute. Collagen peptides are broken down so your body absorbs them easily, which also means they will not gel. The gelatin is what makes a gummy a gummy.

Practical tip. Keep the heat low and do not let the mixture boil. Gelatin loses its setting strength once it gets too hot, and a batch that boiled will stay syrupy in the mold no matter how long you chill it. You only need it warm enough to dissolve.

Ingredients

  • 2 cups fresh or frozen blueberries
  • A splash of water, just enough to blend
  • 2 tablespoons allulose
  • 3 tablespoons unflavored gelatin
  • 1 tablespoon CWLI Collagen, optional

Instructions

  1. Add the blueberries, water, and allulose to a blender. Blend until smooth.
  2. Pour the blueberry mixture into a small saucepan.
  3. Whisk in the gelatin, and the collagen if you are using it.
  4. Heat over low heat, stirring continuously, until everything is fully dissolved and smooth. Do not let the mixture boil.
  5. Carefully pour into silicone gummy molds.
  6. Refrigerate for about 2 hours, or until completely firm.
  7. Remove from the molds and store in an airtight container in the refrigerator.

Storing them

They keep in an airtight container in the refrigerator for about a week. Mold size decides how many you get and how big each one is, so a small mold gives you closer to 20 and a large cube mold gives you a handful of bigger ones.

Make a batch on Sunday and you have your gummy ready every morning for the week.
