2-Minute Flax and Psyllium Muffin

Bread for fat loss? Yes, you can. This is the closest thing to real bread I have made so far. It takes two minutes in the microwave, and it is approved for the active phase of the CWLI program.

The whole thing is one egg, two tablespoons of ground flaxseed, and one tablespoon of psyllium husk. No flour, no gluten, no rising time, and two grams of net carbs.

Almost every gram of carbohydrate in it is fiber, and fiber is what does the work during active fat loss:

  • Psyllium husk absorbs water and forms a gel, which slows digestion and keeps you full long past breakfast.
  • Ground flaxseed adds fiber plus lignans, which support the way your body processes and clears estrogen.
  • The egg brings the protein that protects lean muscle while you are losing.

Practical tip. Let the batter rest for about 30 seconds before it goes in the microwave. Psyllium husk needs a moment to absorb the liquid and set up. Skip the rest and you get a wetter, denser muffin instead of a sliceable one.

Ingredients

  • 1 egg
  • 2 tablespoons ground flaxseed
  • 1 tablespoon psyllium husk
  • 1/2 teaspoon baking powder, optional, for a fluffier texture
  • 1 tablespoon everything bagel seasoning, or a little less

Instructions

  1. Whisk the egg in a small, round, microwave-safe dish or muffin dish.
  2. Add the ground flaxseed, psyllium husk, and everything bagel seasoning. Add the baking powder if you want it a little fluffier.
  3. Mix well until everything is evenly combined.
  4. Let the batter sit for about 30 seconds so the psyllium husk can absorb the moisture.
  5. Microwave for 1 minute, adding a little more time if needed, until the center is set.
  6. Slice it, toast it, and enjoy it like bread.

How to eat it

Slice it through the middle and you have two rounds. Toast them and they hold up to anything you would put on real bread. Avocado toast, a fried egg sandwich, or just butter while it is still warm.

Two minutes and one bowl. Save this one for the next morning you want bread with your eggs.
